White Coffee and Oreo Pudding PDF Print E-mail

Ingredients:

  • 1 pack of Jelly / Agar-Agar Powder

  • 900ml water (differs in every jelly brand, please follow the instruction written on the packet)

  • 5 packs of 3-in-1 Old Town White Coffee

  • 30 grams white sugar (depending on your preference as the White Coffee is already sweetened)

  • 1 pack of Oreo (with white cream in the middle)

Methods:

  • Mix Jelly Powder with 5 packs of White Coffee and pour 900ml of water

  • Stir the mixture until it boils (You may taste it and adjust the sugar level. Please remember that after the jelly is set, the taste will be less sweet).

  • Prepare muffin tins and pour the jelly mixture until half of the mould.

  • Refrigerate the jelly for 7 minutes and place the Oreo in the middle.

  • After all the Oreo is placed, pour the balance of the jelly mixture on top of the Oreo.

  • Refrigerate until it sets and remove the pudding from the mould and serve cool.

Ingredients:

  • 3/4 cup cocoa powder
  • 1 1/2 cups all-purpose flour
  • 1 1/3 cups sugar
  • 1 1/2 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 2 eggs
  • 3/4 cup warm water
  • 3/4 cup buttermilk
  • 3 tbs vegetable oil
  • 1 tsp vanilla extract

 Methods:

  • Preheat oven to 175 Celcius
  • Coat a large 12-cup muffin tin with butter
  • Sift cocoa, flour, sugar, baking soda, baking powder, and salt into large bowl
  • Stir in eggs, water, buttermilk, oil, and vanilla until smooth, about 3 minutes
  • Spoon batter into cups. Bake for 20 to 25 minutes.
  • Let cool in tin 10 minutes

Ingredients:

  • 1 cup mashed ripe bananas
  • 2 large eggs
  • 2 cups cake flour
  • 10 tablespoons butter
  • 1/2 cup sour cream
  • 1 1/2 teaspoons vanilla
  • 3/4 cup plus 2 tablespoons sugar
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt (not needed if you use salted butter)

Methods:

  • Preheat the oven to 176 Celcius
  • Lightly grease a 9 1/4 by 5 1/4 by 2 1/2-inch loaf pan with butter.
  • Puree the bananas, sour cream, eggs and vanilla in a food processor.

  • Sift the cake flour, sugar, baking soda, baking powder and salt into the bowl of an electric mixer.

  • Add the remaining 10 tablespoons butter and mix on medium-low speed until blended, about 30 seconds.

  • Add the banana mixture in 3 batches, scraping the sides of the bowl and mixing on medium speed between each addition.

  • Pour into the loaf pan. Bake until lightly browned and bread bounces back to the touch, about 1 hour 10 minutes.

  • Remove from the oven and cool for 10 minutes before turning out onto wire rack to cool completely.

Ingredients:
  • 500 - 600gsm Frozen strawberries (cut off the green leaf before you freeze the strawberries)
  • 200gsm All purpose flour
  • 1tsp Baking powder
  • 100gsm Butter (room temperature)
  • 6tbs Light Brown sugar
  • 2tsp Corn flour
  • 1tbs Vanilla essence
  • 4tsp Caster sugar
Methods:
  • Preheat oven on 175 Celcius.
  • Mix all purpose flour, baking powder and butter in a big bowl with your fingers until it forms like cookie crumbs. Combine the brown sugar into the mixture and leave it aside.
  • In a baking plate, mix the strawberries with corn flour, vanilla, and sugar.
  • Pour in the crumbs onto the strawberries and make sure that none of the strawberries appear on the surface to avoid leaking.
  • Bake for around 15 - 18 minutes.
  • Serve with vanilla ice cream.

    Ingredients:
    • 2 cups all purpose flour
    • 2 tbs baking powder
    • 1/2 cup sugar
    • 3/4 cup full cream milk
    • 1 tbs vanilla extract
    • 120gr butter (at room temperature)
    • 1 egg
    • 1 1/2 cups chocolate chip
    • 2 - 3 tbs light brown sugar (for topping)
    Methods:
    • Preheat the oven to 176 Celcius.
    • Mix the flour, sugar, and baking powder in a big bowl (A).
    • Mix the butter, egg, vanilla extract, and milk and combine well (B) using spatula (do not use electric mixer).
    • Pour the B mixture into bowl of A and mix them well together.
    • After the mixture is well combined, fold in the chocolate chips and be careful not to overmix them.
    • Spoon the muffin batter into muffin cups until 3/4 full and bake for 10 minutes.
    • Take out the muffins from the oven and sprinkle the brown sugar on top of the muffins and bake them again for another 10 - 12 minutes. Using toothpick, check the muffins if they are fully cooked inside.
    • Serve warm.
